Pink Granit and Sunny Slopes
Chiroubles has the most homogeneous soil of all the Beaujolais villages with Pink Granit dominating the sunny slopes of the vineyards.

Impressed with the ageability and elegance of the Beaujolais wines before the introduction of the Macération Carbonique technology we are aiming for a wine that is made in the Burgundy tradition although slightly seasoned with some of the characters that the “méthode Beaujolaise” brings.
2023 was our first effort to create the style we are aiming for. It was a very warm year. So the challenge was more to achieve mature and rounded tannins before the sugar levels became too high and the acid levels too low. To find a level of harmony before the grapes became overripe.
The grapes were picked in the morning within a 8 hour time period and transferred to the winery. Here we de-stemmed about 70% of the harvest and layered whole bunches and destemmed grapes in the vat. After alcoholic and malolactic fermentations the wine was aged in both wooden barrels and concrete tanks for 9 months prior to bottling.
The resulting wine is delicious already now, with generous dark fruit and spice. It has sufficient backbone and acidity to develop further with age.

2024 was a cool year, so sugar levels were in line with our ambitions and the challenge was to let the grapes mature so that the high acid levels would come down to optimum levels and the tannins would transform from green to nutty before the autumn rains started. We managed to pick at a good point in time and we think the balance is very good.
We de-stemmed slightly less this year at about 50% of the harvest and layered whole bunches and destemmed grapes in the vat. After alcoholic and malolactic fermentations the wine was aged in both wooden barrels and concrete tanks for 9 months prior to bottling.
The wine is full of luscious fruit with strawberries, raspberries and blackberries. The vintage shines through with an elegant freshness and hints of spice, tobacco and liquorice. Already delicious the wine will develop further with age.





Cadole Granit Rose rosé 2024
The Provence style of Rosé has long been a favourite for our summer drinking. The aim is to produce a wine in this direction but with the distinct twist of adding the gamay fruit.
The 2024 has a pale salmon pink hue. The acids are realtively lively with both strawberry and raspberry notes. There is also a hint of grapefruit and a very light touch of tannins adding to the crispness of the wine. Perfect as an apéritif or to accompany a summer salad.
Technically the wine was made using the saignée method and the malolactic fermentation was blocked for increased freshness.
